Recipes
Here are a few recipes that I think are quite good.
The first two are my own creations.

Rich Creamy Seafood Sauce for Pasta

| 300g | Asparagus (chopped) |
125ml | Skim Milk |

Note: Feel free to change the amounts to suit your tastes.
In a fry pan over medium heat, melt the margarine. Begin to sautee the
ingredients. First add the garlic and savour the aroma for a couple of
minutes. Add the asparagus and let it cook for a few minutes while
stirring the ingredients from time to time. Add the mushrooms and
continue to stir. Shortly, after you add the mushrooms, put in the
basil. When the mushrooms look close to done, add the prawns,
while still continuing to mix everything. At this time, you may
also add a bit of salt and pepper if you so desire, although they
are not necessary. The prawns should cook quickly. Once, the
prawns are cooked, lower the temparture and add the cream cheese
and milk. Follow the directions on your package of linguini and
cook it. By the time this is done, your sauce should be ready.
Pour the sauce over the bed of linguini and you're ready for some
good eatin'.
Curried Apple Couscous Salad

| 2 cups | couscous |
1 1/2 cups | boiling water |
| 1/2 | small red onion |
2 cloves | garlic |
| 2 Tbsp. | olive oil |
1 1/2 tsp. | curry powder |
| 1 | average to large lemon |
2 Tbsp. | honey |
| 1 bunch | parsley |
1 | cucumber |
| 3 | apples |
3/4 cups | raisins (optional) |
Note: Feel free to change the amounts to suit your tastes.
- Place couscous in a large bowl. Add boiling water and
briefly mix. Leave covered for 15 minutes.
- While waiting for the couscous, make the dressing:
- Place onion and garlic in a food processor (or blender)
and obliterate.
- Add curry powder, olive oil, the juice (minus seeds,
of course) of the lemon, and honey continuing to blend.
- Add 1/2 the bunch of parsley leaves continuing to blend.
- If you feel that the dressing is too thick, you can add
a bit more olive oil, although it does end up fairly thick.
- After waiting the requisite 15 minutes for the couscous,
fluff with a fork. It should be quite dense and needs to be broken
up.
- Mix dressing with couscous and then place covered in fridge for
at least a couple of hours to let couscous absorb the flavours.
- Peel and seed both the cucumber and apples after the couscous
has sat long enough.
- Chop the remaining parsley leaves.
- Chop the cucumber into 1 cm cubes.
- Chop the apples into 1-2 cm slices. (i.e. 1-2 square cm with the
thickness of a slice)
- Add parsley, cucumbers and apples (and raisins if you want,
although this is just an untried idea) to the couscous and mix.
Infamous Chocolate Chip Cookies
(The chain letter chocolate chip cookie recipe.)

| 1 cup | Brown Sugar |
2 cups | Flour |
| 1 cup | Sugar |
1 tsp. | Baking Soda |
| 2 | Eggs |
1 tsp. | Baking Powder |
| 1 tsp. | Vanilla |
1/2 tsp. | Salt |
| 12 oz. | Chocolate Chips |

- Place the oatmeal in a blender and blend.
- Cream the butter and sugars in a large bowl.
- Add the eggs and vanilla.
- Mix in the oatmeal, flour, baking powder, baking soda, and
salt.
- Stir in the chocolate chips.
- Roll the dough into balls and place on a baking sheet.
- Bake for 10 minutes at 375 degrees.
Makes 48 cookies.
